Appleton CSA Week 6 News

Just as we were about to pull out our irrigation reel for the first time this season, an early morning thunderstorm dropped nearly two inches of rain on our fields. Recent hot weather had been drying our sandy soils, and fruiting crops had started showing signs of stress. The deluge put a halt to field activities for a couple days, but it will satisfy our water needs for another week. As we continue to battle weeds, fall plantings of broccoli, cabbage, and cauliflower went out this week. We also pulled the first of our garlic crop, which is curing in the greenhouse. We continue to wait for summer crops of tomatoes and melons to ripen, but heavy loads of carrots, cucumbers, and summer squash are coming in from the field.

Arugula, baby kale, beets, carrots

Cucumbers, curly kale, fennel, green cabbage

Head lettuce, rainbow chard, salad turnips

Scallions, summer squash, zucchini

Pick-your-own: flowers & herbs

3 salt-packed anchovies—rinsed, soaked and filleted

1 tablespoon drained capers

1/2 small garlic clove

1/4 cup XVOO

3 tablespoons fresh squeezed lemon juice

3 tablespoons Dijon mustard

3 cups packed fresh herbs: parsley, dill, cilantro, basil (and a healthy handful of mint if you have it)

Cracked pepper & flaky sea salt

This fragrant salsa verde is a wonderful way to use the beautiful herbs in our PYO fields. The balance of fresh herbs with the delicious briny burst from salted anchovies will make your taste buds explode!

Spread it onto crusty bread, add a dollop to buffalo mozzarella or serve with meats and fish.

Important Policy Reminder:
If you are a primary shareholder sharing with someone else, please remember that your share needs to fit into a single Appleton Farms CSA-issued bag.
